Vegan? Gluten Free? Hungry for some Macaroni & Cheese? Here is a recipe for you to make that is vegan and one I’d love for to to try. My husband eats vegan much of the time for health reasons, so I have had to work on some vegan recipes that we can all eat! The cheesy taste comes from the nutritional yeast! So here we go.
Ingredients:
VEGAN MACARONI & CHEESE
1 Cup Brown Rice Penne
2 1/2 Cups Almond Milk
1/4 Cup Nutritional Yeast
1 T. Dijon Mustard
Salt & Pepper to Taste
2 Cups Broccoli
Bring the almond milk to a simmer and add the penne. Cook the penne until about a minute is left until tender and add the broccoli and finish cooking until both are cooked. Add the nutritional yeast, mustard, and salt and pepper stirring well. Taste adding more salt & pepper if needed. Serve sprinkling on a little extra nutritional yeast to the top. Enjoy!
