These Enchiladas are one of our favorite family meals! It is plant based, vegan, and delicious. It can easily be made non-vegan just by adding meat and changing the cheese and sour cream. We try and eat more plant based diet for health reasons in our family. I am sure you will find this recipe a great one! This recipe makes 6 large enchiladas.
Get all your ingredients ready for the enchiladas:
3/4 Cup Chopped Peppers (I used multi-colored)
3/4 Cup Beans (I used Black)
3/4 Cup Onion
3/4 Cup Cooked Quinoa (I used multi-colored)
1 Cup Cooked Cubed Yams or Sweet Potatoes
1 Cup Packed Spinach

Heat a large skillet and drizzle in some olive oil. Add the onion, sauté a little and then add the peppers cooking some more. Next add in the beans, potatoes, and quinoa. Season with cumin, chili powder, and sea salt to taste. Lastly add in the spinach cooking for a few minutes. Set aside and make the enchilada sauce.
Enchilada Sauce
Prepare Spice Mix:
4 t. Chili Powder
1 t. Garlic Powder
1 t. Cumin
1/2 t. Onion Powder
In a heated saucepan melt butter. If you are vegan melt vegan butter, I use Earth Balance. Add 2 T. flour stirring with a whisk.
Add next: 1 Cup Tomato Paste, stirring till mixed.
Next add: 2 Cups Vegetable Broth
Simmer: Add Salt to taste and adjust seasonings
Lay out 6 Tortilla shells and fill!
In a greased baking dish ladle some heated enchilada sauce to cover the bottom. Roll the enchiladas and line your dish. Cover the enchiladas with sauce. Bake in 350 oven for 30 minutes. If you want to add cheese add some towards the end of the baking time so it can melt.
Serve with all your favorite sides and toppings! Rice, Lettuce, Sour Cream, Hot Sauce, Jalepenos, Guacamole etc. YUMMY!!!!!
Vegan Cashew Cream (This is a great substitute for sour cream)
In a bowl soak 1 cup cashews in boiling water for 2 hours. Drain and rinse. Place in a high speed blender.
ADD
1/2 Cup Water
1 t. apple cider vinegar
2 t. fresh lemon juice
1/2 salt or more to taste
Blend on high until smooth Chill
