Fall is here, the days are cooler, so how about some homemade Pumpkin Soup?
We had several pumpkins lined up in our house as decorations for fall. I remembered years ago seeing a picture of a pumpkin used as a soup container and have always wanted to do it! I got out a good knife and a good spoon for scooping and started carving.
I saved the top for a lid and pulled out a bunch of the insides. I cut it up and put it in a pot and just covered it with vegetable broth.
Next I chopped up two peeled apples and added them to the soup pot
While this simmered I diced 1 cup of onion, 2 celery stalks and sautéed them in 2 Tablespoons of butter till tender.
I added this to the soup pot along with 2 cups of milk. I would recommend using maybe some half n half for a richer taste! If you like the taste of curry I like to add curry powder too.
My daughter got me a Cuisinart Immersion hand blender last Christmas, I absolutely LOVE it for blending soups! It takes seconds to puree the soup smooth. Since I am an avid soup maker usually I will take out some of the vegetables, beans etc. and blend the rest adding what I take out for some chunks. This soup though I just blended smooth.
Now add salt and pepper to taste. If you want to add beans to this soup like garbanzos (chick peas) they are a nice addition. Next I inserted a crock pot liner into my pumpkin! I made sure the soup was nice and hot and filled the pumpkin. If you totally want to make a different soup or stew and want to use the pumpkin do it!
