Pumpkin Oatmeal Pancakes

Happy Fall! These healthy delicious Pumpkin Oatmeal Pancakes will send you out the door ready to conquer the day.

When I was growing up Saturday mornings called for pancakes! In Alaska we pick our own blueberries and cranberries right in our back yards, talk about amazing thrown into pancakes, muffins and breads! Since all of you can’t step out into my yard and pick berries we will have to make the next best thing and enjoy Pumpkin Oatmeal Pancakes.  In an upcoming recipe I need to share my Mom’s homemade Cranberry Bread recipe with you all!

On to the recipe!

Pumpkin Oatmeal Pancakes

1 Cup Buttermilk (add 1 T. Vinegar to 1 cup of milk)

In a bowl add:

1 Egg beaten

1/2 Cup Pumpkin Puree

2 T. Oil

1/2 Heaping Cup Oatmeal

Let this mixture soak for a few minutes

Measure out dry ingredients in a bowl

1 Cup White Whole Wheat Flour

This is what I use OR use 1/2 cup whole wheat and 1/2 cup white flour

1/3 Cup Brown Sugar

1/2 t. Soda

1/2 t. Salt

1 Heaping t. Cinnamon

1/4 t. Nutmeg

Now mix the Dry Ingredients and the Wet Ingredients along with the 1 Cup of Buttermilk

Heat your Griddle and Cook up the Pancakes!! This recipe makes 12
