If you haven’t tried making oven roasted vegetables you seriously need to start now! I would simply start with your favorite vegetable, experiment with different seasonings etc. Meal prepping them ahead is my favorite thing to do.
I go shopping and gather together a well rounded amount of vegetables that will be used all week. Sometimes I mix them all together and roast in a huge pan and other times I will do each type separately. Making omelets, wraps, stir fries etc. is so much easier now! If you are trying to eat more healthy and incorporate more vegetables into your diet this is the perfect way to do it!
