GF Peanut Butter Banana Pancakes

Here is a recipe for my Healthy Gluten Free Peanut Butter Pancakes. Mornings can be so busy so I am always experimenting with making quick and easy recipes. Young chefs in your household could easily whip these up with barely any mess! I use my NutriBullet and they mix up quickly.

1 Banana

2 Eggs

1 Tablespoon PB2 (dried peanut butter)1 teaspoon Chia Seeds

2 teaspoons Ground Flax Seeds

Mix in a blender and pour onto your heated skillet greased with a little coconut oil. Cook each pancake throughly before flipping because they are tender. I cook in a smaller pan and cover the pancake with a lid until set, this makes the flipping much easier. This recipe makes two large pancakes and serves 1. spread with a little coconut oil or butter and drizzle with real maple syrup or honey. Add more sliced bananas for garnish. Enjoy!
