If you are looking for the BEST DESSERT EVER to serve your family and friends then you have to make this amazing Strawberry Rhubarb Crisp! I am growing my own rhubarb this year in my garden but friends love to drop off bags of rhubarb for me also. Sometimes it is hard to find rhubarb in the winter at the grocery store but you can easily cut/bag and freeze rhubarb for the winter months ahead. Generally people don’t like straight rhubarb in a recipe so the half strawberries half rhubarb is PERFECT! Don’t forget to serve with a great vanilla ice cream and whip cream. Strawberry Rhubarb Crisp
This delicious crisp is a crowd pleaser! It is the perfect combination of tart and sweet.
Equipment
- 1 casserole dish I used a 10 x 10 Casserole Dish
Ingredients
- 3 Cups Sliced Rhubarb
- 3 Cups Sliced Strawberries
- 3/4 Cup Sugar
- 3 Tablespoons Cornstarch
STREUSEL
- 1 Cup Oatmeal
- 1/2 Cup Packed Brown Sugar
- 1/3 Cup Flour
- 2 teaspoons Cinnamon
- 1 Stick COLD Butter Cut into tiny cubes
Instructions
- Mix Together 1 Cup Oatmeal, 1/2 Cup Brown Sugar, 1/3 Cup Flour and 2 tsp. Cinnamon
- Cut COLD butter into tiny cubes and mix into oatmeal mixture. I use a fork and then work together with my hands forming a big ball. After mixing together it will easily crumble onto your crisp. Place in refrigerator while you make the strawberry rhubarb crisp.
- Slice 3 Cups Rhubarb
- Slice 3 Cups Strawberries
- Add Sugar and Cornstarch
- Mix well
- Place into greased casserole dish or cast iron skillet
- Crumble streusel over the top
- Bake in a 350 degree oven for 45 minutes
- Serve with vanilla ice cream and whipped cream
