Are you ready for a great dinner???? Well here it is! This meal is great if you are trying to lose weight, eat more whole grains, and just plain try and eat healthy. We will be making a delicious vegetable quiche with a twist! The crust is make from brown rice! Rice is gluten free so that in itself IS healthy plus saves you a ton of calories.
Start off by cooking some brown rice. I measured out 1.5 cups of rice and cooked it.
In a bowl measure out 3 cups of cooled cooked rice and mix in 1 beaten egg. Mix well and press into a greased pie dish.
Bake the formed crust in a 400 degree oven for 10 minutes.

Next: Chop 2 Cups Zucchini, 2 Packed Cups Broccoli
Chop 1/2 medium onion. Melt 1 T. butter in a heated skillet and sauté the onion. When it has softened and cooked add the zucchini and broccoli and sauté more until crisp tender. Add salt, pepper, and garlic powder.
Break 3 eggs into a separate bowl, whisking and then adding in 1 Cup Milk. Add in about 1/2 t. salt if you’d like also. Grate 3/4 of your favorite cheese, I used cheddar.
Place the vegetable mixture into the quiche shell and pour the egg/milk mixture over the top and then cover with the cheese. Bake in a 350 degree oven for 30 minutes or until set up. Partially through baking I recommend covering the top edges with foil so the rice doesn’t become to hard and crunchy.
Take out and let it set for 10 minutes or so to let it set up and be easier to slice. I served with a fruit salad and my Asian Rainbow Salad.
