Living in Alaska we are blessed to have an abundance of wild cranberries growing in the woods right out our backdoor! In the fall we ride the 4-wheeler to our favorite spot and pick to our hearts content. I even carry along a little stool to sit on while picking! My Mom used to bake this amazing cranberry bread when I was growing up and passed this recipe down to me. Family recipes are the best! My husband and I pick as many cranberries as we can to use in different recipes all during the winter months. We have a vacuum sealer and after filling the bags and sealing we freeze our bounty. I hope you enjoy making this recipe. It can be made with chopped store bought cranberries but if you can get Alaskan cranberries they are perfect for this recipe.

Alaskan Cranberry Bread
A delicious quick bread filled with Alaskan cranberries
- Stand Mixer
- 1 Cup Sugar
- 4 Tbsp. Butter
- 1 Egg
- 1-2 Mashed Bananas (Bananas are Optional)
- 3/4 Cup Milk
- 2 Cups Flour
- 2 tsp. Baking Powder
- 1/4 tsp. Baking Soda
- 1 tsp. Salt
- 1 1/4 Cups Whole Alaskan Cranberries or Chopped Bagged Cranberries
- Nuts Optional
Beat together Butter and Sugar
Mash bananas and add to butter & sugar
Beat in egg and Milk
Add all dry ingredients and beat together
Fold in cranberries (they can be frozen)
Fold in nuts (optional)
Grease a loaf Pan and fill with batter
This bread can also be made into mini loaves
Bake at 350 for 45-60 minutes or until done
Delicious spread with Butter or Cream Cheese
