60 Second Pumpkin Muffin

I LOVE this 60 second Pumpkin Muffin recipe! It is soft and fluffy and so delicious to eat warm sprinkled with cinnamon sugar or even spread with frosting. Here in Alaska we are already experiencing chilly mornings so this quick muffin is delicious with my morning latte to start the day off perfectly.

60 Second Pumpkin Muffin

This healthy pumpkin muffin mixes up quickly and can be baked in the microwave in 60 seconds

  • 2 Tablespoons Oatmeal Flour (I grind fine in my coffee grinder)
  • 2 Tablespoons Ground Flax (I grind fine in my coffee grinder)
  • 2 Tablespoons Canned Pumpkin
  • 1 Beaten Egg
  • 1 teaspoon Oil
  • 1 teaspoon Cinnamon
  • 1 teaspoon Brown Sugar
  • 1 teaspoon Baking Powder

Frosting for One

  • 1/2 teaspoon Melted Butter
  • 1/4 teaspoon Vanilla
  • 2 Tablespoons Powdered Sugar
  • 1/2 teaspoon Milk or Half and Half
  1. Mix together all the muffin ingredients

  2. Spray a 10 oz. clear Pyrex baking ramekin

  3. Sprinkle bottom of dish with cinnamon sugar

  4. Add batter

  5. Microwave on high for 60 seconds

  6. Turn/flip onto a plate and sprinkle with more cinnamon sugar or if you prefer top with frosting.

  7. Mix together frosting ingredients and top muffin
