60 Second Pumpkin Muffin

Equipment

  • Microwave Oven

Ingredients
  

  • 2 Tablespoons Oatmeal Flour I grind fine in my coffee grinder
  • 2 Tablespoons Ground Flax I grind fine in my coffee grinder
  • 2 Tablespoons Canned Pumpkin
  • 1 Beaten Egg
  • 1 teaspoon Oil
  • 1 teaspoon Cinnamon
  • 1 teaspoon Brown Sugar
  • 1 teaspoon Baking Powder

Frosting for One

  • 1/2 teaspoon Melted Butter
  • 1/4 teaspoon Vanilla
  • 2 Tablespoons Powdered Sugar
  • 1/2 teaspoon Milk or Half and Half

Instructions
 

  • Mix together all the muffin ingredients
  • Spray a 10 oz. clear Pyrex baking ramekin
  • Sprinkle bottom of dish with cinnamon sugar
  • Add batter
  • Microwave on high for 60 seconds
  • Turn/flip onto a plate and sprinkle with more cinnamon sugar or if you prefer top with frosting.
  • Mix together frosting ingredients and top muffin
