This beautiful colorful salad will truly brighten your day! I actually made it after having leftover vegetables after making a platter of Nori Rolls. I’m so glad I did because it is quite delicious and you can eat it in SO many ways!
Here are my Nori Rolls!!!
Well on to making the salad!
Very thinly slice your vegetables to a uniform size, I cut mine in approximately 3-4 inch slivers.
Carrots – Red Cabbage – Red, Yellow, and Orange Peppers, and Cucumber!
I also made a dressing and lightly mixed in with the vegetables and sprinkled with toasted sesame seeds.
Dressing: This is great on everything!
Dressing:
2 T. Veri Veri Teriyaki with sesame seeds
1 T. Rice Vinegar (I LOVE this)
1 T. Water
1 t. Sesame Oil
1 t. Ginger Paste (You could instead add a little ginger powder to taste or a bit of grated fresh ginger if you prefer)
Taste the dressing and if you would like a hint of sweetness add a drizzle of honey or pure maple syrup!
I hope you enjoy this salad, I have even put it on sandwiches!
